
This wine is a rosé of Pinot Noir made in the Methode Ancestrale tradition from the Topotero Vineyard, located in Avila Beach in San Luis Obispo County. The vineyard is farmed practicing organic on a home ranch just over a mile from the Pacific Ocean. The wine was whole cluster pressed and then fermented in neutral french oak barrels with native yeast. The wine was bottled at the very end of fermentation to capture the natural bubbles in the bottle. The wine aged on lees in bottle before being riddled, disgorged, corked and caged, all by hand. 264 cases produced. Finished Wine Chemistry: 10.9% alcohol, 3.25 pH, 8.72 g/L TA, No added SO2
