The Newtown Pippin apples are sourced from Bear Valley Ranch, located in Aptos, CA. The orchard was planted in the 1940s and has been farmed by the same family for the last 3 generations. The orchard is dry farmed, with no input farming, where it is only pruned and picked each year. The 2020 cider is barrel fermented with native yeast and no additions. It is aged for 12 months sur lees and then it is refermented with 2021 Gamay pomace from the Topotero Vineyard. Fresh fermenting apple juice from the 2021 vintage was used as a dosage to capture the natural carbonation in the bottle. 9.0% alcohol
