The Newtown Pippin apples are sourced from Bear Valley Ranch, located in Aptos, CA. The orchard was planted in the 1940s and has been farmed by the same family for the last 3 generations. The orchard is dry farmed, with no input farming, where it is only pruned and picked each year.The apples are pressed in November and then fermented with native yeast in neutral french oak barrels. The cider ages on lees in barrel for 10 months and then is racked and refermented with fresh Sauvignon Blanc juice from the 2021 vintage. Right before bottling, the coferment is steeped with fresh lime leaves from Stepladder Ranch, located in Cambria CA, for some extra aromatics. Then, new 2021 fermenting apple juice is added to capture the natural carbonation in the bottle. 9% alcohol.
