This 100% Pinot Noir, freshly popped and, right away, displays on the nose a mix of ripe strawberry, cherry and a hint of just-ripe raspberry, mixed with a light, dried herbal note. The red fruit flavors follow through to the palate, where the balanced acidity gives the fruit a counterpoint while the soft, yet focused mouthfeel is speckled with glints of minerals. As it finishes, the fruit and mineral come together in a tangy, tongue-watering package that leads to a layered and complex finish mirroring the nose and the palate. As it breathes, the flavors, aromas and texture become more intense and more defined but it stays harmonious and elegant and alive.
There’s also this - thing. I can’t define it, but after critically tasting wine for 25 years, you get to know this - thing. It makes itself known right away and you stop - and you go back to the glass - yep, that’s it, whatever it is. It’s almost like Umami in food. It’s an inextricable combination of flavor, aroma and, amazingly so, texture that you can smell. It weaves in between all the flavors you can define and knits them together with an otherworldly silk-like ribbon.
