The Newtown Pippin apples are sourced from Bear Valley Ranch, located in Aptos, CA. The orchard was planted in the 1940s and has been farmed by the same family for the last 3 generations. The orchard is dry farmed, with no input farming, where it is only pruned and picked each year. The apples are pressed and then the juice is fermented with native yeast in French oak barrels. The cider ages sur lie for 12 months in barrel. This cider is re-fermented at bottling with a dosage of fresh 2021 juice that is added to capture the natural carbonation in the bottle. 8.0% alcohol.
